Job summary

The Greene King Brewery in Darrington is seeking a Kitchen Manager or Head Chef to lead the kitchen operation within a busy pub-hotel environment. You will own the kitchen, develop the team and drive high standards across food quality, presentation and service.

With a 45-hour week, a £35,000–£39,000 salary plus bonus, and a clear path to build processes and culture, you’ll recruit, train and coach the kitchen team while collaborating with management to maximise restaurant, hotel and events

Qualifications

• Proven experience leading a busy kitchen in a pub, hotel or food-led operation.
• Confident ownership of the kitchen and leadership of a team.
• Experience recruiting, training, coaching and developing kitchen staff.
• Strong people leadership and ability to set clear expectations.
• Knowledge of food safety, allergens, HACCP and kitchen compliance.

Responsibilities

• Take ownership of the kitchen and lead from the front.
• Build and develop a strong kitchen team as recruitment continues.
• Work closely with the Kitchen Team Leader to create a well-organised operation.
• Set clear expectations and ensure everyone understands roles.
• Maintain high standards of food quality, presentation and service.
• Ensure every service runs smoothly, safely and efficiently.
• Lead, coach and develop the team to build skills and confidence.
• Manage stock takes, ordering, stock rotation and wastage.
• Maintain food safety, hygiene and health & safety standards.
• Monitor food GP and costs to deliver a commercially successful kitchen.
• Prepare the kitchen for busy services, weekends and key trading occasions.
• Collaborate with the General Manager to achieve food and commercial goals.
• Maximise opportunities across hotel, pub, restaurant and events.
• Bring ideas to improve kitchen operation and customer experience.
• Foster a positive kitchen culture with clear expectations and pride in delivery.
