Job summary

Courtyard by Marriott Exeter Sandy Park is seeking a Hotel Sous Chef to lead the kitchen, oversee casual dining, banqueting events, and ensure exceptional guest satisfaction. The role covers The View, Kitchen & Bistro, M&E, and Breakfast services, with focus on fresh Devon ingredients and cost controls.

You will manage a team, develop menus for events, maintain sanitation, and drive continuous improvement. The position offers a 36-40k salary, full-time, onsite, with training and progression

Qualifications

• All-round expertise in casual dining.
• Banqueting experience handling events from 10–100 guests.
• Passionate about fresh local ingredients.
• Understanding of food waste with a drive to use all ingredients.
• Lead the pass and produce all menu elements when required.
• Lead and develop Kitchen & Bistro staff.
• Focus on guest and employee satisfaction.
• Oversee Kitchen & Bistro team development.
• Knowledge of food cost and margin control.
• Experience creating menus for various event styles.
• Flexible across K&B, M&E, The View, Breakfast areas.
• Supervise all kitchen areas for consistent quality.
• Ensure sanitation and food standards are achieved.
• Oversee all food preparation and support across areas.
• Review staffing to meet guest service and financial objectives.

Responsibilities

• Lead the staff and manage all food related functions for the hotel.
• Personally run the pass and produce all elements when required.
• Maintain high standards of sanitation and food quality.
• Coordinate across Kitchen & Bistro, The View, Breakfast and events.
• Assist in menu creation for various event styles.

Kitchen & Bistro ; Located on our 3rd floor, this more relaxed dining option caterers for the business guests all day and offers simple dishes using the best local ingredients Devon has offer.

As well as our 2 culinary offerings, we cater for meetings and events whilst hosting elite sports teams, along with bespoke celebrations.
