Job description

Head of Food & Beverage Operations (maternity cover)

To lead the operational delivery of our F&B strategy across the estate. The role designs how F&B should run in a venue - layouts, execution of F&B ranges, concepts, training - and works through venue teams to make it happen consistently. It is the point at which F&B strategy stops being a plan and becomes what the customer experiences.

Service delivery & speed of service

Sets standard for transaction speed and interval conversion, and designs initiatives to drive continuous improvement against it.

Owns bar, kiosk, and lounge counter layout design to eliminate server crossover and bottlenecks.

Operational partner to the Range & Price team. Translates range and pricing strategy into executable venue activity, and flags operational blockers and opportunities at the planning stage, not at launch.

Designs new planograms to support updated ranges, ensuring margin-accretive products hold eye-level positions and that layouts are operable at peak.

Identifies and specifies commercial space opportunities for supplier investment (for example, front-of-house kiosks at high-footfall entry points) and supports the Commercial team in converting them.

Food safety & stock

Accountable for the F&B food safety framework across the estate. Responsible for approving operating procedures and risk assessments.

Designs stock wastage initiatives to support run-down of stock arising from F&B initiatives and range change.

Capability & training

Identifies where training is needed across the venues.

Designs training content for hospitality initiatives, new concepts, and product launches, including launch toolkits and materials. Delivers training alongside the F&B Operations Manager.

Leads the F&B project portfolio: seasonal operations (pantomime), new cafe, bar and lounge launches, and any new initiatives.

Owns delivery of all new and refurbished F&B concepts (if any).

Owns the business case and CAPEX submission for service and revenue. improvement opportunities (vending machines, digital screens, coffee machines)

Supports central projects from an operational standpoint.

F&B Systems

Key owner of F&B systems (EPOS, inventory management, DAS, till system).

Define what the business requirements are based on our F&B strategy across all F&B systems to enable discussions on what changes are needed.

Leadership and capability

Lead and develop the F&B Operations Manager, with clear individual accountabilities and no overlap.

Act as a role model for leadership, collaboration, and accountability, and represent F&B commercial at senior forums.
