Job summary

Langshott Manor Hotel in Horley, near London, is seeking a Head Chef to lead the Mulberry Restaurant kitchen. You will recruit, train and coach a small team and craft menus aimed at Rosette status while delivering exceptional dining experiences.

Reporting to the General Manager, you will manage menu planning, cost control, and events such as weddings and private functions, while upholding HACCP standards and food safety across all service periods.

Qualifications

• Experience and passion for food and creating 2/3 Rosette standard dishes from fresh ingredients.
• Ability to work flexible shifts. 5 days 45 hrs per week
• Experience within a quality hotel kitchen environment.
• Team player with an ability and desire to contribute and support team members to develop and achieve.
• Excellent eye for detail and able to deliver consistent standards.

Responsibilities

• Recruit and coach a team of 3 Chefs and 2 Kitchen Porters.
• Plan, order, deliver, store, prepare, cook and serve across all menus for the Mulberry Restaurant.
• Develop menu ideas to progress Rosette status across all dishes.
• Deliver quality menus for Weddings and events in the Mulberry Restaurant.
• Ensure HACCP and food hygiene, health, and safety compliance.
• Achieve gross profit targets on dishes for future investment.
• Foster teamwork and effective communication across departments.
