We are looking for an energetic, reliable and enthusiastic Head Bartenderto join our Front of House team.

Located within the stunning Grade II listed Pillar Hall, our restaurant, Idalia, celebrates exceptional British produce, delivered with outstanding service and attention to detail. Alongside our restaurant, our Speakeasy Bar Pepperbird offers guests a distinctive and memorable drinking experience.

As Head Bartender, you will play a key role in the day-to-day running of our bar operations, working closely with the Bar Manager and wider Front of House team to ensure consistently high standards of service, presentation and guest experience.

The ideal candidate will be passionate about hospitality, confident leading a team and proactive in maintaining an efficient, well-organised and welcoming bar environment.

About the Role

We are seeking an experienced and motivated Head Bartenderto support the Bar Manager in overseeing the daily operations of our Speakeasy Bar and restaurant bar service.

You will lead by example, supporting and motivating the bar team, maintaining operational standards and ensuring every guest receives exceptional service. This is an exciting opportunity for someone with previous bar supervisory experience who is looking to further develop their leadership skills and progress within the hospitality industry.

Salary: Up to £18.00 per hour

Contract: Full Time – 40 Hours

What We're Looking For

• 2 years+ previous experience in a bar supervisory or senior bartender role within hospitality.
• Strong communication and leadership skills, with the ability to motivate and support a team.
• A genuine passion for hospitality, drinks and delivering excellent guest experiences.
• Ability to work confidently in a fast-paced environment.
• Good organisational, time-management and problem-solving skills.
• Knowledge of food safety, workplace health and safety standards.
• A proactive approach, strong attention to detail and a hands‑on attitude.

Key Responsibilities

• Support the Bar Manager with the day-to-day running of the Speakeasy Bar and restaurant bar operations.
• Supervise, lead and motivate the bar team, ensuring smooth and efficient service.
• Lead by example, maintaining excellent standards of hospitality and guest service.
• Ensure the bar is consistently presented, clean, organised and fully prepared for service.
• Support staff training, development, onboarding and performance management.
• Assist with rotas, scheduling and effective staff deployment.
• Oversee stock control, inventory, ordering and responsible stock management.
• Monitor drinks quality, presentation and consistency.
• Ensure compliance with all relevant health, safety, hygiene and licensing regulations.

• Work closely with the wider Front of House team to deliver a seamless guest experience.
