Job summary

Apex Hotels in Dunblane seeks a Food & Beverage Manager to lead all F&B operations for flagship venues, including a new restaurant and bar concepts, plus extensive banqueting facilities.

You will drive annual profit growth across all F&B outlets, work with the Head Chef on menu development, and build a high-performing, guest-focused team while delivering exceptional guest experiences.

Responsibilities

  • Deliver outlet profit targets while managing annual budgets.
  • Lead weekly/monthly commercial meetings with operational teams and GM/Operations Manager to review KPIs.
  • Payroll/food & beverage cost analysis to ensure cost control and variances are addressed.
  • Work with Head Chef on culinary development and delivering brand-aligned offerings.
  • Develop a multi-skilled team with payroll flexibility and a flat structure.
  • Create and deliver annual commercial plans with operations, procurement, sales and marketing teams.
  • Deliver monthly Net Promoter and Guest Review Index indicators.
  • Maintain high visibility during peak service periods to focus on guest delivery.
  • Own in-stay and post-stay F&B service feedback and CRM to profile guests.
  • Drive guest-centric service excellence across all outlets.

Role Overview

This is an exciting opportunity for a Food and Beverage Manager to join our team as this is a role which will impact and influence key decisions and strategies within the business, looking after our flagship food and beverage hotel, with brand new restaurant and bar concepts, and large scale banqueting and confferencing facilities. We are looking for an innovative and productive leader to join our team, who is results driven with a keen eye for detail and with a clear objective of delivering sustainable annual departmental profit growths across all F&B outlets. You will spearhead an exciting productivity and growth drive across the hotels’ outlets.

Main Responsibilities:
  • Delivery of outlet profit targets whilst successfully handling annual budgets
  • Hosting of weekly and monthly commercial meetings with operational teams and Area General Manager /Operations Manager reviewing key metrics and performance indicators
  • Daily / weekly payroll / food / beverage cost analysis in accordance with forecasted and materialised revenues to ensure optimal performance and immediate overspend correction
  • Work closely with the Head Chef on culinary development and delivering a quality offering designed appropriately for each brand and individual location
  • Develop a multi skilled team that delivers payroll flexibility with minimal hierarchy
  • Creation and delivery of annual commercial plans in conjunction with the operations, procurement, sales and marketing teams
  • Delivery of monthly Net Promoter and Guest Review Index service indicators
  • High visibility during key service periods to ensure a continuous focus on customer delivery
  • Maintaining a team focus on ‘the Customer’s need’ with service personalisation
  • Ownership and management of outlet CRM to build and qualify guest profiling
  • Ownership of the full in stay and post stay food and beverage service feedback
