Job summary

La Reunion, part of RW Randall Ltd, invites a passionate Sous Chef with fine-dining credentials to join the kitchen team in Guernsey. You will assist the Head Chef, develop seasonal, high-quality menus, and uphold the highest standards of upscale cuisine.

The role offers live-in accommodation if required and opportunities for career growth. We seek a candidate with at least 3 years in a Sous Chef position, strong leadership, and food costing expertise, willing to relocate to the Channel Islands.

Qualifications

• Minimum of 3 years of professional Sous Chef experience in high-end establishments.
• Immediate availability for relocation to Guernsey or UK Channel Islands with visa sponsorship support.
• In-depth knowledge of advanced culinary techniques, food costing, and margin management.
• Strong leadership and communication skills, in a high-pressure team environment.
• Food Hygiene Level 3 qualification (or equivalent).

Responsibilities

• Support the Head Chef in kitchen operations and lead the brigade during service.
• Contribute to development of fine-dining seasonal menus using local ingredients.
• Ensure consistent quality in preparation, cooking, and presentation of dishes.
• Oversee stock control, ordering, waste management, and food cost targets.
• Ensure compliance with food safety, HACCP, and health and safety requirements.
• Participate in training and mentoring of line chefs and apprentices.
• Stay calm, organized, and solution-focused during peak service periods.
• Collaborate with front-of-house to deliver an impeccable guest experience.
• Maintain flexibility with working hours according to restaurant needs.
