Job summary

Delano London is seeking an exceptional F&B Cost Controller to join the pre‑opening finance team. You will lead end‑to‑end governance of procurement, inventory, and COGS across restaurants, bars, kitchens, and events, partnering with senior finance and operations to safeguard margins and ensure robust reporting.

Support the pre‑opening mobilisation of cost control processes, including supplier onboarding, stock planning, recipe costing, and first‑90‑day performance reports, ahead of the 2026

Qualifications

• Experience in hotel or luxury hospitality F&B cost control/procurement with clear ownership of COGS, inventory, and supplier financials.
• Solid understanding of F&B operations, product standards, seasonality, yield/portion control, and their P&L implications.
• Proficiency with purchasing and inventory systems and advanced Excel skills.

Responsibilities

• Assist sourcing best‑value, brand‑standard F&B products within budget and lead‑time targets.
• Ensure POs are raised accurately by F&B and maintain visibility of open liabilities.
• Monitor price movements, negotiate cost improvements, and record savings.
• Maintain vendor records with contracts, specs, pricing, and SLAs.
• Manage rebates and post monthly accruals; ensure timely invoicing.
