Job summary

Silversea is seeking an Executive Sous Chef to serve as second-in-command of our shipboard culinary team, supporting the Executive Chef in leading daily galley operations and delivering ultra-luxury dining experiences.

The role requires 7+ years in international 5-star settings (1+ year as Sous Chef), 2+ years in Michelin Star/Relais & Châteaux environments, and strong dietary and public health expertise for luxury guests aboard ship.

Qualifications

Maritime STCW95 certification and fitness for sea duty.
7+ years in an international 5-star establishment; 1+ year as Sous Chef; 2+ years as Sous Chef in Michelin Star/Relais & Châteaux environment.
Expertise in European and International cuisines; strong knife skills; catering to complex dietary restrictions.
Knowledge of maritime Public Health regulations and ILO/MLC labour standards.
Strong leadership, organization, problem-solving, and passion for luxury guest hospitality.

Responsibilities

Assist the Executive Chef in daily galley management and expediting orders; oversee food preparation across outlets to ensure top-tier presentation.
Monitor inventory, mis-en-place, recipe adherence, and reduce food waste.
Lead strict compliance with maritime Public Health guidelines, sanitation, IPM, and temperature logging.
Oversee line cook training, scheduling, evaluations, and crew duty assignments.
Coordinate dietary requests, accommodate allergies/intolerances, and engage guests through cooking demos and events.
Collaborate with Restaurant Manager, Maitre d's, Hotel Stores, and HR to ensure seamless service and staff welfare.
