Fairmont Singapore and Swissôtel The Stamford, a luxury hotel group, seeks an Executive Chef for SKAI Restaurant to lead culinary operations, menu innovation, and guest satisfaction in a high-volume setting.

You will manage budgets, mentor a high-performing team, ensure HACCP compliance, and collaborate with the Food & Beverage team to deliver exceptional dining experiences that uphold the brand’s standards.

Competenze

Diploma or Degree in Culinary Arts, Hospitality Management, or a related discipline.
8–10 years of progressive culinary leadership experience in luxury hotels or premium dining.
Proven experience as an Executive Chef or Chef de Cuisine in high-end dining.
Michelin-starred or award-winning restaurant experience preferred.
Strong leadership and cost management skills.
Excellent communication and stakeholder management.

Mansioni

Lead the daily operations of the SKAI kitchen, ensuring smooth and efficient service.
Develop creative, seasonal, and innovative menus aligned with the restaurant’s concept.
Ensure all dishes meet approved recipes, presentation standards, and portion controls.
Monitor food production to minimize waste and maximize profitability.
Manage kitchen budgets, food and labour costs, and inventory.
Recruit, coach, and develop a high-performing culinary team.
Maintain HACCP compliance and collaborate with F&B for promotions and campaigns.
