Job Description
The Restaurant Manager will serve as the face of our brand-new restaurant operation. Reporting to the Food and Beverage Manager, this role provides operational expertise, commercial insight, and day-to-day leadership to ensure the restaurant delivers an exceptional dining experience.
The ideal candidate will be a dynamic, customer-focused professional with a strong background in high-quality London dining establishments. They must have a proven ability to influence and collaborate with operational teams, along with a passion for hospitality and the ability to coach and train a new team to deliver a seamless, premium dining experience.
Operational Excellence
- Partner with the Food and Beverage Manager, Executive Chef, and casino management to ensure the smooth daily operation of the restaurant.
- Lead by example, maintaining exceptional operational standards and identifying opportunities for improvement.
- Support the implementation, review, and maintenance of F&B policies, procedures, and standards to ensure consistency and compliance.
Commercial Performance
- Analyse restaurant performance metrics (revenue, margins, waste, customer satisfaction) to identify trends and opportunities.
- Collaborate with the management team to develop and execute strategies that drive revenue growth and improve profitability.
- Support the development and launch of new menus, products, and promotions to enhance customer engagement.
Customer Experience
- Monitor and evaluate customer feedback to identify areas for improvement.
- Work with operational teams to ensure a seamless and memorable dining experience.
- Champion initiatives that elevate service quality, menu innovation, and overall satisfaction.
Training & Development
- Train and develop the restaurant team to uphold the highest service and operational standards.
- Share best practices and provide coaching to foster continuous improvement.
Stakeholder Engagement
- Build strong relationships with casino management, F&B teams, and support functions to drive success.
- Serve as the primary point of contact for restaurant-related inquiries and initiatives.
- Communicate effectively with stakeholders at all levels to align with broader F&B objectives.
Required Skills & Competencies
- Strong knowledge of restaurant operations, including food safety, allergens, and beverage service.

- Proven history in training and developing restaurant teams.
