Job Purpose

To lead the kitchen team in providing high-quality meal production to maximize profit and to deputise for the Head Chef in their absence.

Main Duties and Responsibilities
  1. Schedule the team and allocate work to optimize productivity.
  2. Maintain safety and minimize risks related to the working environment and processes.
  3. Manage purchasing cycles to minimize waste, ensuring robust processes for checking contract pricing, delivery, and yield.
  4. Coordinate commodity/product delivery and waste collection to meet operational needs, supervising contractors accordingly.
  5. Ensure controls are in place to minimize the environmental impact of kitchen operations.
  6. Support the team to achieve KPI targets in line with dish standards and SOPs.
  7. Be present during peak service periods to support the team.
  8. Create a safe, secure, and stimulating environment for kitchen staff.
  9. Ensure all team members are equipped with the necessary tools, skills, and knowledge.
  10. Brief service teams on product availability and recommended items before service.
  11. Ensure all dishes are specified, costed, and meet product specifications before delivery to customers.
  12. Maintain compliance with processes, systems, and standards.
  13. Champion tactical and change initiatives from management or brand directives.
  14. Provide clear purpose, support learning, and give feedback on performance to the team.
  15. Coach team members to develop their skills continually.
  16. Maintain productivity, food cost, and expense targets, and keep records on waste and supplier interactions.
  17. Comply with company policies and legislation.
  18. Monitor risks and maintain records related to HACCP, cleaning, maintenance, and safety certifications.
  19. Maintain appropriate stock levels of food and cleaning products based on forecast activity.
Preferred Qualifications
  • College qualification or equivalent experience.
  • Significant kitchen management or leadership experience in a supervisory role.
