Job summary

Daylesford Organic is seeking an Assistant Head Baker for its UK bakery operations, based at the Daylesford Cotswolds Farm Shop. You will be second in command to the Head Baker, leading the night shift and ensuring the production of our award‑winning organic breads, viennoiserie, and pastries for Farmshops, cafés and Bamford Collection pubs and hotels.

The role is full time (45 hours per week), with a salary around £40,000 per annum, working 5 days in 7, and a commitment to Soil Association

Qualifications

• Expertise in artisan bread‑making.
• Lamination and viennoiserie production.
• Hand‑shaping sourdough breads.
• Leadership and team supervision.
• Food safety and hygiene knowledge.

Responsibilities

• Support the Head Baker in leading the night shift team.
• Maintain the award-winning quality of bakery products and ensure items are produced to specification.
• Develop and rollout new and seasonal bakery lines; adapt to range changes.
• Deputise for the Head Baker, overseeing daily production, orders, and recipe execution.
• Ensure ingredients are prepared accurately and bakery prep is completed on time.
• Uphold Soil Association organic standards and all due‑diligence and audits.
• Supervise the team to deliver high‑quality products with minimal wastage.
