Job summary

The Berkeley and The Emory require a dedicated cost control professional to manage inventory, COGS reporting and budgeting. You will prepare trend reports for senior management, issue weekly and monthly cost controls, and ensure accurate balance between stock and accounting records.

You will work with the Purchasing System and Fourth Hospitality, driving best practices for a group-wide cost control function and supporting the F&B success team as needed.

Qualifications

  • Experience in cost control for hospitality operations.
  • Strong analytical skills and attention to detail.
  • Proven ability to produce accurate monthly/weekly reports.
  • Familiarity with hospitality purchasing systems and cost controls.

Responsibilities

Job description

This position will be looking after both The Berkeley and The Emory.

1 REPORTING
  • To prepare trend reports on inventory value for Senior Management.
  • To prepare and issue weekly accurate Food and Beverage Cost Of Sales reports.
  • To run monthly reports on uptake, menu engineering, and sales mix.
  • To produce a month End report on Group margins, purchasing, stock, and cost control report that can be distributed to all department Managers.
2 ANALYSIS
  • To investigate any abnormal and above budget Cost Of Sale statistics and recommend actions to rectify any potential problems.
  • Together with the area cost controller, involvement in developing best practice for cost control on a group level.
  • To ensure all recipes are costed effectively prior to being implemented on a menu.
  • To be fully acquainted with the Purchasing System, to ensure that it is used to its full potential as a business tool to enhance reporting, control and operation of the function to its full potential.
  • To assist and drive F&B Success team, troubleshooting daily issues, and liaising with Fourth Hospitality where necessary.
3 INVENTORY CONTROL
  • To coordinate and issue stocktake timeframes to relevant Department Managers.
  • To oversee and participate in all monthly Departmental stocktakes (Health Club, Beverage, Tobacco, Stationery).
  • To investigate any physical stocktake to theoretical stocktake variances.
  • To review and equate the minimising of stock holding with potential usage projecting for each property or departments. Implementation of Par levels where necessary.
4 ACCOUNTING
  • To prepare monthly expense journals for Month end.
  • To ensure that all physical stocktakes balance to the General Ledger.
  • To build and maintain effective communication channels and proactive working relationships with all Department Managers, to ensure the most effective cost control operation.
  • To ensure efficient administration function is in operation within the Cost Control department.
  • To assist in preparation of the annual Budget.
