Raffles London at The OWO hosts three unique dining experiences created by Mauro Colagreco, renowned chef behind Mirazur, awarded Best Restaurant at The World’s 50 Best Restaurants 2019. Mauro is also the UNESCO Ambassador for biodiversity, promoting awareness of the ecological impact of food choices. The dining experiences include Mauro Colagreco at Raffles London at The OWO, Saison, and Mauro’s Table.

Scope Of Position

To lead and manage a section of the kitchen, overseeing and directing commis and demi chef de parties, assisting sous chefs in food preparation and service, ensuring standards are met, and maintaining cleanliness and organization of equipment and utensils.

Responsibilities
Operation
  • Lead and manage a kitchen section, ensuring production, service, and hygiene standards.
  • Follow procedures, methods, and recipes as outlined.
  • Ensure proper storage, rotation, and labeling of food, equipment, and dry goods.
  • Coordinate with sous chefs on stock management and deliveries.
  • Train demi chefs, commis chefs, and apprentices to meet standards.
  • Contribute to dish development and maintain quality across outlets.
  • Participate in projects to improve kitchen operations.
  • Explain services to guests, visitors, and staff as needed.
  • Respond promptly to service needs.
  • Perform additional duties or work in different departments as required.
Health and Safety
  • Report and rectify hazards immediately.
  • Be familiar with fire, emergency, and bomb procedures.
  • Ensure safety of persons and property by adhering to laws and regulations.
  • Promote health and safety awareness within the department.
Qualifications, Skills & Experience
Essential
  • Availability to work on a rota basis.
  • Proven ability to deliver high service levels under pressure.
  • Excellent communication and customer service skills.
  • Strong time management and multitasking abilities.
  • Willingness to support a 24-hour operational schedule.
Desirable
  • Experience at demi chef de partie level or higher.
  • Leadership skills to run a kitchen section confidently.
  • Experience in luxury hotel environments with standards like LQA or Forbes 5*.
