Job description

Job Description: Chef at Schoen Clinic Newbridge

The Chef at Schoen Clinic Newbridge will provide catering services to patients and staff of Newbridge House, delivering therapeutic menus designed by the Dietetic team.

Principle Duties
Food Preparation and Service:
  • General preparation of meals and snacks, following food hygiene principles.
  • Assist in serving meals to patients in designated dining areas.
  • Prepare and serve food according to recipes and menus provided by the Dietetic team.
  • Prepare food for patients with dietary restrictions due to religious, cultural, allergenic, or intolerant reasons.
  • Ensure timely distribution of meals.
  • Follow portion control guidelines for meals and snacks.
  • Maintain consistent presentation of meals and snacks.
  • Adhere to current hygiene regulations, documenting temperatures during storage, preparation, cooking, and service.
  • Dispose of waste, including food waste, in accordance with Health and Safety and Newbridge House policies.
Ordering and Stock Control:
  • Conduct daily stock takes prior to ordering.
  • Rotate stock daily within dry stores, fridges, and freezers.
  • Place daily orders using the online shopping system, aligned with menu requirements.
  • Limit stock storage according to kitchen size, following food hygiene standards.
  • Report issues related to ordering or deliveries to the lead Dietitian.
  • Maintain and service equipment per manufacturer’s requirements and best practices.
  • Review and update COSHH records as necessary.
  • Complete risk assessments for new equipment.
  • Work in compliance with Health and Safety policies and Newbridge House guidelines.
  • Perform temperature checks and replenish kitchen supplies across all kitchens.
Clothing:
  • Wear appropriate personal protective equipment at all times in the kitchen.
  • Uniforms, shoes, and hats are provided by Newbridge House.
  • Ensure uniforms and aprons are clean at the start of each shift and changed as needed.
  • Do not wear uniforms or aprons outside Newbridge House.
