Job description

We are looking for an experienced and passionate Chef to lead the kitchen prep at Al Volo – The Italian Quickie, a new grab & go concept bringing real regional Italian food to the fast-paced environment of the City.

About Al Volo

Al Volo – The Italian Quickie is an upcoming grab-and-go restaurant located in the heart of The City of London. Founded by Alessandro and Elena, Al Volo focuses on delivering high-quality, homestyle Italian dishes and quality Italian coffee.

Role Overview

This is a prep-only role—no live service, no express plating, just high-quality cooking done the Italian way.

Key Responsibilities
  1. Lead daily prep of a small, high-quality menu of regional Italian dishes.
  2. Execute traditional recipes with precision, respecting ingredients and methods.
  3. Manage batch cooking, mise en place, and food storage efficiently.
  4. Maintain impeccable cleanliness and food safety standards.
  5. Contribute to kitchen setup and menu testing ahead of launch.
  6. Provide input on kitchen equipment choices and organisation.
Who You Are
  1. Deeply knowledgeable about Italian regional food and traditions.
  2. Experienced in prep kitchens, with strong attention to quality and consistency.
  3. Practical and resourceful, with a solid understanding of kitchen tools and workflows.
  4. Excited to shape a new concept from day one.
  5. Comfortable with a startup mindset: flexible, hands-on, willing to learn from mistakes.
  6. A team player who believes in building something meaningful together.
  7. Available to start mid-May for trials and menu development.
