• Plan menus
• Accommodate dietary, cultural and allergen requirements
• Order stock and source seasonal/local produce
• Manage food costs, gross profit and waste
• Maintain food-safety, hygiene and health-and-safety records
• Oversee kitchen cleaning, equipment and stock control
• Prepare staff rotas; train and supervise Cook and assistants
• Liaise with guests, suppliers and colleagues to provide a professional service
