Job summary

Cambian Lufton College is seeking a Catering Manager to lead all aspects of catering across the establishment, ensuring nutritious, attractive meals for students and visitors. You will also deliver learning sessions, arrange work experience in hospitality and catering, and supervise catering staff.

The role requires knowledge of health and safety, menu planning for dietary needs, and experience teaching or supervising students in a kitchen environment.

Qualifications

• Relevant qualification in food preparation and cooking or catering and hospitality.
• Current First Aid at Work certificate (may be achieved in post).
• Knowledge of health and safety requirements in a catering environment.
• Experience of menu planning to meet dietary requirements and provide nutritional balance.
• Experience of teaching or supervising students within a kitchen environment.

Responsibilities

• Plan menus in advance, ensure dietary needs are met and implement programmes by care, education and clinical teams.
• Prepare, cook and present meals to a high nutritional standard for students, visitors and special occasions.
• Manage rotas and timetables for catering staff and opening of site kitchens.
• Ensure compliance with regulations related to food preparation, cooking and storage.
• Control provisioning, ordering from suppliers, check deliveries and monitor catering budget.
• Ensure kitchen equipment is safe, maintained and securely stored.
• Maintain a clean, hygienic kitchen environment and safe working practices.
• Supervise students on work placements and assess progress with teaching staff to meet educational goals.
• Deliver and assess student knowledge and skills for City & Guilds qualifications in Food Preparation and Cooking (Level 1) and related qualifications.
• Possess DBS checks and participate in safeguarding practices.

Job description

The role of the Catering Manager involves being responsible for all aspects of catering within the establishment and ensuring that the kitchen produces attractive food to a high nutritional standard for a range of meals and occasions. The Catering Manager is also responsible for delivering learning sessions for students and providing internal work experience relating to hospitality and catering, therefore there is some teaching and assessment responsibility. The Catering Manager will also be responsible for managing other catering staff, this role therefore draws upon a range of practical skills, requires a sound knowledge base and the ability to relate to colleagues and the young people who live and study here. Main Responsibilities

• To plan menus in advance, ensure full dietary needs of the students are met and implementing programmes put forward by the care, education and clinical teams.
• To prepare, cook and attractively present meals according to set standards, in order to provide a well-balanced nutritional menu. This includes catering for visitors and special occasions.
• To be responsible for the effective operation of the kitchen, including managing rota's and timetables for catering staff and the opening of both site kitchens and personalisation for lunches.
• To ensure that regulations relating to food preparation, cooking and storage are complied with.
• To ensure adequate stock of appropriate provisions. This will involve ordering in good time from approved suppliers, checking deliveries and invoices and monitoring the catering budget.
• To ensure that kitchen equipment is safe to use, maintained in working order and securely stored when not in use.
• To monitor and maintain a high standard of kitchen environment, paying particular attention to cleanliness/hygiene, safety, damage/wastage, tidiness and good order.
• To supervise students on work experience placements in the college refectory, to report on their progress and collaborate with other teaching staff to agree educational and vocational goals for students identified as having employment goals relating to hospitality and catering.
• To deliver and assess students knowledge and skills in line with qualification criteria, as the tutor responsible for delivery of City & Guilds Food Preparation and Cooking (Level 1) and for any additional qualifications relating to hospitality and catering at Entry Level/Level 1, such as Food Hygiene.
