Job summary

Rockwater Branksome is recruiting a Junior Sous Chef to support the kitchen management team. You will work with the Head Chef and Sous Chefs to uphold the highest standards of food quality, safety, and cost control in a premium, high-volume venue.

You will lead busy sections, train staff, and ensure consistent presentation and portions while maintaining a safe, hygienic kitchen. Join a dynamic team delivering exceptional dining experiences on Dorset’s beachfront.

Qualifications

• At least 1 year experience as a Junior Sous Chef or Kitchen Supervisor in a premium high volume venue.
• Experience in managing large teams.

Responsibilities

• Assist in day-to-day kitchen management, ensuring efficient workflow and adherence to health and safety standards.
• Run busy sections, cook to Rockwater specifications.
• Maintain cleanliness and hygiene through regular inspections.
• Prepare, cook, and present dishes to high quality and consistency.
• Guide and train kitchen staff on recipes, portions, and presentation.
• Lead and motivate staff, fostering a positive working environment.
• Ensure dishes meet taste, appearance and portion standards.
• Address guest feedback with Senior Chefs to adjust as needed.
• Collaborate with all departments to ensure smooth operations.
