Job summary

SUMI Marylebone is hiring a Bartender to join our founding team in London. You’ll craft cocktails to our standards, welcome guests with warmth and knowledge, and work closely with bar and floor teams to deliver polished service.

Qualifications

• Previous bartending experience in a quality restaurant or bar.
• Good knowledge of cocktails, spirits, wine and bar service.
• Flexibility to work evenings, weekends and bank holidays.

Responsibilities

• Preparing and serving cocktails and other drinks to our recipes and standards.
• Setting up the bar, stocking fridges and completing mise en place before service.
• Keeping the bar clean, organised and fully stocked throughout each shift.
• Welcoming guests, taking orders and making thoughtful recommendations.
• Processing orders and payments accurately.
• Building a strong understanding of our food and drinks menus.
• Following allergen, licensing, hygiene and responsible-service procedures.
• Receiving and storing stock correctly, and reporting any discrepancies.
• Working closely with the floor team to keep service running smoothly.
• Taking part in training and continuing to develop your skills and knowledge.

Bartender - New Opening, SUMI Marylebone

SUMI is entering an exciting new chapter with the opening of our second restaurant in the heart of Marylebone in November 2026. Created by renowned sushi master Endo Kazutoshi and part of Creative Restaurant Group, SUMI has earned a reputation for delivering exceptional Japanese cuisine inspired by authentic traditions, expert craftsmanship and genuine hospitality.

Following the success of our Notting Hill neighbourhood restaurant, SUMI Marylebone will be a gem in one of London's most exciting dining destinations showcasing the finest seasonal ingredients, the best sushi preparation and warm, welcoming service. We're looking for talented individuals to join our founding team from day one, help us bring this exceptional restaurant to life, and grow with us as we establish a new benchmark for Japanese dining in London.

The Role

As our Bartender, you will be at the heart of the guest experience, preparing consistently excellent drinks and bringing warmth, knowledge and personality to every service. You will work closely with the wider bar and restaurant teams to create an atmosphere that feels polished, welcoming and unmistakably SUMI.

What We’re Looking For

Previous bartending experience in a quality restaurant or bar is important, but personality matters too. We are looking for someone who enjoys connecting with guests, takes pride in their work and brings positive energy to the team.

You will need:

• Good knowledge of cocktails, spirits, wine and bar service
• A genuine passion for drinks and hospitality
• A warm, confident and professional approach with guests
• Strong attention to detail and high standards of cleanliness
• The ability to stay calm, organised and efficient during a busy service
• A practical, team-first attitude
• An interest in Japanese food and drinks would be an advantage
• Flexibility to work evenings, weekends and bank holidays

Salary: Up to £16.01 p/h including service charge, plus benefits
