Platinum Recruitment is partnering with a stunning, award-winning destination restaurant on the Somerset/Dorset border. We seek an Assistant General Manager to join the senior leadership team and to act as deputy to the General Manager, with full operational responsibility in their absence.

You will lead daily restaurant operations, drive guest experiences, and mentor a high-performing team across front and back of house, aiming for excellence within a Rosette-standard environment.

Qualifications

• Experience as an Assistant General Manager or senior operations manager in a Rosette-standard, boutique hotel or high-end restaurant.
• Strong leadership and team development skills.
• Track record in delivering exceptional guest experiences.

Responsibilities

• Overseeing floor management and leading pre-service briefings to ensure seamless service.
• Supporting recruitment, onboarding, coaching, and succession planning.
• Monitoring sales targets, managing labour deployment, overseeing stock controls and driving profitability.
• Maintaining health, safety, and regulatory compliance across the site.

What’s involved?

• Compliance & Excellence: Maintaining EHO readiness, fire safety standards, and ensuring full health, safety, and regulatory compliance across the site.

Ideally, you will have a strong background as an Assistant General Manager or senior operational manager within a Rosette-standard, boutique hotel, or high-end fresh-food restaurant environment.
