Job summary

AC Hotel by Marriott Birmingham is seeking an Assistant Restaurant and Bar Manager to lead daily F&B operations, ensuring superb service and profitability. You will manage cost controls, forecast demand, and coordinate with the F&B leadership team to deliver engaging experiences for guests.

You will train and motivate staff, implement health and safety standards, and adapt to shift patterns including evenings and weekends. This role emphasizes leadership, guest focus, and team collaboration.

Qualifications

• Experience implementing controls for food & beverage costs, productivity, labour costs and operating supplies.
• Strong leadership and team-motivating abilities for a busy F&B operation.
• Good understanding of food hygiene and health & safety procedures.

Responsibilities

• Oversee daily management of Food & Beverage outlets to ensure high service standards.
• Carry out Duty Management shifts as required and participate in business planning reviews.
• Prepare weekly and monthly forecasts for Restaurant, Bar and Room service.
• Communicate clearly with Food & Beverage Manager, Head Chef, Conference & Events Manager and Operations Manager.
• Support flexible shift patterns and weekend/evening coverage as needed.

You will have experience ofimplementing and maintaining control measures to ensure that food and beverage costs, productivity, labour costs and operating supply costs for the outlet are in line with budget.

To carry out Duty Management shifts according to business needs. To participate in departmental meetings to review progress towards achievement of business plan goals.

An Assistant Restaurant and BarManager is responsible for the daily management of the food and beverage outlets, ensuring that the highest standards of food and beverage service are provided to the guests. The Assistant Restaurant and Beverage Manager plans, organizes and directs the overall Food and Beverage operation, Administration, Marketing and Promotion of the outlet, and is responsible and accountable for its profitability and revenue generation.

You have good understanding of food hygiene and health and safety procedures.

Prepare weekly and monthly forecasts for Restaurant, Bar and Room service.

Ensure clear communication with the Food and Beverage Manager,Head Chef, Conference and Events Manager and Operations Manager.

We are open 7 days a week 365 days a year and need people to work a range of shifts and days - this means great flexibility if required. We are busier generally during evenings and weekends but shift patterns and contracted hours can all be discussed at interview.
