Danone recherche un stagiaire pour rejoindre le Centre Global de Recherche et d’Innovation à Gif-sur-Yvette dès février 2027 pour une durée de 6 mois. Vous travaillerez au sein de l’équipe Ferment & Fermentation – Advanced Techno et contribuerez au développement de cultures lactées, à la conduite d’expériences et à l’analyse de données scientifiques.

Profil Bac+4/5 en université ou école d’ingénieurs, formation en microbiologie/biotechnologie, et intérêt pour la modélisation des données sont

Qualifications

• Niveau Bac+4/5 en université ou école d'ingénieurs requis.
• Forte expérience en microbiologie, fermentation, biotechnologie ou science des aliments.
• Compréhension des procédés de fermentation laitiers et cultures starter est un atout.
• Bonne connaissance des outils de data science, en particulier la modélisation.

Responsibilities

• Contribuer au développement des cultures dairy.
• Concevoir et réaliser des expériences de fermentation pour évaluer les performances des cultures.
• Surveiller et analyser les cinétiques d'acidification, le comportement de fermentation et la croissance microbienne.
• Réaliser des analyses microbiologiques et physico-chimiques, et interpréter les données.
• Appliquer l'approche DoE et interpréter les résultats pour le choix et l'optimisation des cultures.
• Développer des modèles prédictifs et analyser les données pour comprendre la performance et la qualité du produit.

YOUR MISSIONS AT DANONE:This internship will take place in Giff-sur-Yvette, at our Danone Global Research & Innovation Center starting from February. Mahtab SHOUKAT, Dairy Ferment & Fermentation Manager in the team Ferment & Fermentation- Advanced Techno. Ingredients will guide tour through your day-to-day tasks and help you grow in your role:

• Contribute to the development of dairy cultures.

• Design and conduct fermentation experiments to evaluate culture performance in dairy matrices.

• Monitor and analyze acidification kinetics, fermentation behavior, and microbial growth.

• Perform basic and advanced microbiological and physiochemical analyses.

  Apply Design of Experiments (DoE) approach and interpret experimental data to support culture selection and optimization.

• Develop predictive models and apply data analysis approaches to understand fermentation performance and product quality.

• Prepare technical reports, summarize results, and present findings.

About You

For this position, we are looking for someone:

• Available from February 2027 for a duration of 6 months

• At the level of Bac+4/5 in university, or engineering school

• Strong background in Microbiology, fermentation, Biotechnology or food science

• Understanding of dairy fermentation processes and starter cultures is an advantage.

• Basic understanding of data science tools especially modeling is appreciated

  Scientific rigor, analytical thinking, problem-solving abilities, team-work aptitude, and autonomous

• Ability to analyze and process data with scientific interpretation
