Seasonal contract. Salary adapted to skills and experience (fixed salary + bonus on objective). Accommodation and meals provided by Club Med and other advantages connected with our Club Med group.

Responsibilities:
  1. Ensure hygiene and food safety of the village in a complex environment.
  2. Provide internal expertise to any problem related to hygiene and food safety.
  3. Assist the team in controlling hygiene and food safety.
  4. Design and implement the HACCP plan according to international regulations and local standards, tailored to products and processes used in the village (involving management and relevant services).
  5. Monitor and ensure compliance of products, processes, facilities, and equipment related to food, water, and housekeeping.
  6. Remind and check that staff adhere to good hygiene practices in their workplace.
  7. Identify non-conformities, analyze causes, and collaborate on corrective actions with stakeholders.
  8. Alert department heads and management depending on non-compliance severity.
  9. Oversee raw material reception, advising on corrections for non-conformities.
  10. Ensure hygiene and food safety compliance from raw material purchase to service in restaurants, bars, and rooms.
  11. Check temperature control during transfer processes.
  12. Conduct regular audits in F&B areas, rooms, public areas, and water management, including legionella protocols.
  13. Support laboratory and audit processes, following up on corrective actions.
  14. Ensure pest control management as per HACCP requirements.
  15. Assist the Finance Manager in managing certification systems.
Qualifications and Skills:
  • Educational background in food engineering, veterinary sciences, or similar, with relevant experience.
  • Knowledge of food safety regulations (ISO 22000, ISO 22001, FDA regulations). Certifications in food safety are preferred.
  • Understanding of good practices in the hotel/tourism industry.
  • Languages: English (spoken and written); knowledge of local language is a plus; Mandarin is mandatory for China resorts.
  • Key qualities: adaptability, precision, organization, confidentiality, autonomy, interpersonal skills.
