Offer Description

Join the Laboratory of Oenology (ŒNO) at the University of Bordeaux! The UMR Oenology unites over 120 researchers and staff in all disciplines of oenology, supporting the wine sector through fundamental research, innovation, and know-how to improve wine quality and typicity.

We are recruiting a Post-Doctoral researcher for a project funded by the Nouvelle-Aquitaine Region, focusing on characterizing impact odorant volatile compounds in wines and oak woods.

Main activities:
  • Implement protocols for extracting oak wood compounds
  • Analyze samples using GC-MS and process data
  • Draft progress reports

Regular interactions with the laboratory and industrial partners will be involved.

Responsibilities include:
  • Sample collection and traceability
  • Preparation of wood samples
  • Optimizing extraction conditions
  • Performing GC-MS analyses, including targeted and non-targeted methods
  • Quantifying target compounds and validating methods
  • Data processing
  • Writing progress reports and scientific publications
  • Participating in conferences

Requirements

PhD in food science, natural products, oenology, or analytical chemistry with proven gas chromatography skills. Candidates should be curious, analytical, autonomous, and familiar with extraction techniques like SPE and SPME, as well as statistical data analysis. Knowledge of sensory analysis is a plus.

Salary: €2750 gross/month, with benefits including vacation days, transport subsidy, healthcare, and more. The project involves travel (~once a month) to a cooperage in Cognac. Located in Villenave d’Ornon, near Bordeaux, accessible by tram, bus, or bike.
