We are currently seeking an experienced and qualified Restaurant Director for Le George (M/F) for our Paris location.
Candidates must hold a valid work authorization in accordance with French law.
Fluency in both French and English is required.
Position based in Paris.
Position Profile
The Director of Le George* Restaurant is responsible for ensuring the restaurant’s success by maximizing revenue and profitability while combining innovation and excellence in the culinary offerings.
In collaboration with Chef Simone Zanoni, they oversee delivering an exceptional gastronomic experience, highlighting Mediterranean cuisine in an elegant setting.
They rely on a talented team whose skills are developed and nurtured to uphold the Four Seasons Company’s values of excellence.
The primary role is to recruit and train talent who will contribute to the restaurant’s success. Through high-quality service and experience, they are committed to achieving outstanding scores in both internal and external evaluations, including mystery guests, electronic resident surveys, as well as reviews on online booking platforms.
With strong expertise in service and a perfect mastery of luxury hospitality standards, the ideal candidate demonstrates excellent team spirit, impeccable presentation, and outstanding interpersonal skills.
A true leader, diplomatic and attentive, they guarantee customer satisfaction and ensure proper handling of complaints, regardless of their origin.
Finally, as the person responsible for the restaurant’s daily management, both operationally and administratively, they oversee budget control, investments, and costs to ensure the sustainability and growth of the service.

Manage service flow to provide guests with a pleasant, efficient, and professional experience in line with Four Seasons standards.
Supervise and assist the team during service as needed (dish delivery, guest satisfaction, etc.).
Handle special client requests and ensure proper follow-up.
Receive and implement instructions and ensure their follow-up.
Manage guest reception, including telephone reservations.
Know the menu thoroughly according to the Chef’s suggestions and be able to explain the composition of dishes to guests.
Have in-depth knowledge of the IT systems (Micros, Opera, etc.).
Oversee adequate human and material resources to ensure smooth operation of Le George (cellar, storeroom, linen, staff, etc.).
Communicate daily with other departments to ensure teamwork and professionalism.
Conduct recruitment interviews following Four Seasons quality criteria and the Behaviour Based Interviewing method.
Control payroll management, including leave and overtime tracking.
Ensure maintenance and cleanliness of work areas and equipment.
Prepare team schedules, manage leave and compensatory time in line with hotel activity.
Coordinate scheduling software (Kronos Efficient) with posted schedules and payroll to optimize workforce management.
Support team development through personalized follow-ups and propose training actions to improve individual performance.
Evaluate and assess employees’ work and deliver annual reviews within deadlines set by Human Resources.
Conduct quality assessments on each team member to ensure standards are acquired and consistently applied for service quality.
Actively participate in overall department and hotel management meetings.
Foster a healthy and friendly working atmosphere by promoting team spirit and leading by example.
Comply with all employee-related policies: uniform, time tracking, hygiene, and safety procedures.
Ensure the cleanliness of Le George* and its premises.
Respond promptly and effectively to hotel emergencies and security situations.
