Mandarin Oriental Ritz, Madrid, seeks a Sommelier for Deessa, the celebrated fine-dining room led by Quique Dacosta. The position delivers expert wine and beverage service within a two-Michelin-star setting, advising guests and managing the wine cellar to uphold exceptional standards.

Based at the hotel, you will support wine orders, promote the wine list, and collaborate across departments to enhance guest experiences. Training and development are provided in a luxury environment.

Formación

• Experience as a sommelier in luxury hospitality.

Awarded two Michelin Stars, Deessa is celebrated for its elegant and creative cuisine, combining Mediterranean flavors with a contemporary vision of haute gastronomy. Located in the historic Alfonso XIII dining room of the hotel, Deessa offers a luxurious dining experience through tasting menus such as Históricos Quique Dacosta and Contemporáneo, where technique, outstanding produce, and creativity take center stage. About the Position

Based at Mandarin Oriental Ritz, Madrid, within Deessa Restaurant, the Sommelier is responsible for delivering expert wine and beverage service, advising guests and managing the wine cellar while ensuring excellence in service and full compliance with Mandarin Oriental standards. The position reports to the Assistant Head Sommelier and the Head Sommelier.

As a Sommelier, your key responsibilities will include:

• Delivering an expert and personalized wine and beverage service in accordance with Mandarin Oriental standards.
• Advising guests on wine and beverage selections and recommending appropriate pairings to complement the menu.
• Ensuring the smooth operation of service within the assigned section.
• Assisting in the development, maintenance, and promotion of the wine and beverage list.
• Managing the wine cellar alongside the sommelier team, including receiving, inventory control, storage, and preservation of wines.
• Supporting wine orders, stock management, and cellar sales reporting.
• Ensuring the cleanliness and proper use of cellar equipment and utensils.
• Maintaining in-depth knowledge of menu composition, allergens, and dietary restrictions.
• Preparing and serving beverages, including wines, cocktails, and hot drinks, when required.
• Participating in the setup, service, and breakdown of special events.
• Working collaboratively with the restaurant, kitchen, and other hotel departments.
• Managing billing and payment procedures while providing guests with a warm farewell.
• Promoting wine sales, beverage offerings, and other hotel services through suggestive selling techniques.

As a Sommelier, we expect you to have:

• Relevant training and/or proven experience as a Sommelier; experience in luxury hospitality is highly valued.
• Extensive knowledge of wines, beverages, and food pairing principles.
• A strong guest-oriented mindset and passion for service.
• Excellent communication and advisory skills.
• The ability to work both independently and as part of a team.
• Exceptional attention to detail and commitment to high-quality standards.
