Duties and Responsibilities

In this role, I will assume full responsibility for the efficient operation of the restaurant to provide exceptional products and services within Six Senses brand operating standards and budget.

I will work strategically with the F&B Director and Assistant F&B Director to develop cohesive and productive goals for my department and establish procedures to achieve them. I will support an overall consistency of the company’s vision, quality standards, and develop concepts aligned with brand identity.

My scope of work includes:

  1. Keeping abreast of industry trends and practices, updating knowledge and skills to improve the product and service offering.
  2. Focusing on the rejuvenation of the restaurant experience.
  3. Constantly assessing and reviewing products and services to ensure relevance, innovation, and alignment with Six Senses wellness and sustainability practices.
  4. Regularly reviewing operations through physical presence in the department and ensuring strict adherence to LQA standards.
  5. Providing an exceptional guest experience service in the restaurant.
  6. Carrying out service recovery or empowering hosts to do so in case of guest complaints.
  7. Inspecting department and guest orders regularly, ensuring maintenance and product improvements are addressed promptly.
  8. Leading a team of engaged and experienced hosts to uphold Six Senses' standards of service.
  9. Ensuring restaurant amenities, menus, and wine lists remain relevant and aligned with wellness and sustainability practices.
  10. Maintaining a thorough knowledge of menus, specials, and wine lists to make recommendations, including in the absence of a sommelier.
  11. Managing monthly inventory.
  12. Having comprehensive knowledge of all property facilities and services.
  13. Supporting updates to guest history profiles.
  14. Ensuring clear and effective communication between departments to support smooth operations.
  15. Supervising storage to ensure proper stock levels, storage conditions, and hygiene standards.
  16. Providing guidance on portion sizes and presentation of orders.
  17. Revising and controlling the restaurant’s operational budget to drive profitability while maintaining standards.
  18. Minimizing payroll costs through efficient scheduling and maximizing productivity.
  19. Preparing and submitting required legal and confidential documentation.
  20. Completing all corporate reports accurately.
  21. Attending or leading meetings and briefings as instructed.
  22. Performing additional duties as assigned by management.

Qualifications

I possess the required qualifications, technical skills, and experience in a similar or higher role within luxury hotels, with proven results. I hold at least a Diploma in Restaurant Management or Business and have more than three years of experience in a comparable role.

I have a strong pulse on current culinary trends in international and Mediterranean markets, along with excellent organizational and leadership skills to manage a dynamic restaurant team.

Technical skills include advanced proficiency in MS Office, POS, Reservations, Event Booking, and Outlook platforms. I am fluent in written and spoken English, with some knowledge of Spanish. A European Visa or Work Permit is mandatory.

I maintain a thorough understanding of Six Senses guidelines, rules, regulations, operating standards, facilities, and services.
