We are seeking a skilled and experienced Pastry Team Member to join our team in the kitchen. As a Pastry Chef Tournant, you will be responsible for the daily operation and control of the pastry shop and production area.

  • Ensure the smooth and efficient operation of the pastry shop and production area according to company policies.
  • Responsible for the production, quality, and presentation of pastry and dessert assortment.
  • Assist in preparing production forecasts and recording leftovers to minimize waste.
  • Assist in setting up the pastry display in various buffets.
  • Maintain complete knowledge of United States Public Health rules and regulations.
  • Clean the pastry shop according to schedule and exercise proper methods to minimize equipment damage.
  • Prepare the pastry galley for inspections by ensuring it meets all health and safety standards.
  • Requisition and transport necessary items from main stores to pastry shop when assigned.
  • Ensure recipes and yields meet company standards.
  • Assist in completing the daily pastry consumption recap.
  • Be aware of and acquire necessary knowledge to comply with shipboard operations.
  • Attend meetings, training activities, and courses as required.

Required Skills and Qualifications

To be successful in this role, you will need :

  • A minimum of three years' experience as a Pastry Cook in an upscale hotel, resort, cruise ship, or convention banqueting service (shipboard experience preferred).
  • Knowledge of proper cleaning techniques, requirements, and use of equipment.
  • Completion of high school or basic education equivalency requirement.
