Job summary

Novonesis in Lyngby, Denmark, seeks a Senior Scientist in Baking Applied R&D to lead technical directions for strategic baking projects, translating objectives into priorities and guiding cross-functional workstreams across regions.

You will help build our cultures platform, apply yeast physiology knowledge to baking applications, and mentor colleagues while collaborating with business development, R&D, regional centers, and customers to deliver measurable impact.

Qualifications

• MSc or PhD in cereal science, food science, biotechnology, biochemistry, microbiology or related field.
• Substantial experience in baking science with understanding of flour, dough, processing and product quality.
• Strong knowledge of yeast and microbial systems and fermentation in food applications.
• Proven ability to provide technical leadership in cross-functional development projects.
• Ability to influence decisions and drive progress across regions without formal authority.
• Strong experimental design and analysis of complex datasets.
• Ability to operate under uncertainty and set clear technical priorities.
• Clear communication across scientific, business, customer and leadership audiences.

Responsibilities

• Act as technical lead on strategic baking projects.
• Define technical direction, hypotheses, success criteria, and priorities across workstreams.
• Build and advance the cultures platform in baking and fermentation performance.
• Translate strategic opportunities into focused scientific questions and development plans.
• Create technical alignment across scientists, regional teams, and collaborators.
• Ensure scientific quality and reproducibility across locations.
• Design robust experiments and trials with controls and statistical approaches.
• Analyze data to generate recommendations and support decisions.
• Develop mechanistic understanding linking physiology to product quality.
• Communicate progress and risks to stakeholders.
• Mentor colleagues and share knowledge.
