Novonesis seeks a motivated Master’s student for a thesis focused on evaluating and optimizing working protocols, with emphasis on color analysis for fish applications. The role is based on-site in Pohlheim, Germany, with approximately 38 hours per week and a monthly compensation of €1,000.

You will join the Food & Beverage Biosolutions division, contributing to lab-based research in meat and plant-based products.

Novonesis is looking for a motivated Master’s student to prepare a thesis focused on the evaluation and optimization of working protocols, with a particular focus on methods for color analysis.

About The Team

You will join the Food & Beverage Biosolutions division at Novonesis. Our department develops ingredients for the global meat, plant-based meat alternatives, and prepared foods industries. We also support producers in applying our biosolutions effectively.

You will become part of a team of 17 skilled colleagues working in an inspiring and positive atmosphere. Our facilities include state-of-the-art laboratories and a well-equipped meat pilot plant, which serves as Novonesis’ global center of excellence for meat, plant-based meat alternatives, and prepared foods.

Novonesis offers an exciting Master’s thesis opportunity focused on assessing the impact of freezing and thawing on the viability and functional efficacy of starter cultures used in fish applications.

Your Responsibilities

• Design and conduct freeze-thaw studies to evaluate their effects on starter culture viability and functionality
• Perform microbiological analyses to assess the efficacy of starter cultures under different storage and handling conditions
• Analyse experimental data and draw scientifically conclusions using statistical methods
• Prepare clear and comprehensive documentation of methods and results
• Present results to relevant stakeholders and support broader research activities within the team

Your profile

• You are currently studying for a Master’s degree in food technology, biotechnology, biochemistry, food chemistry, or a related field
• You have practical laboratory experience in one of these areas
• You have a strong interest in microbiological research and possess knowledge of analytical methods and statistical data analysis for evaluating experimental outcomes
• You communicate confidently in German and English
• You are highly motivated, proactive, and able to work independently
• You are also a collaborative team player with strong communication skills

Working conditions

This position is based on-site in Pohlheim, near Gießen, and involves approximately 38 hours of work per week.
