Job summary

Sodexo Live! in St. John's, NFLD is seeking a focused Sous Chef to join our culinary leadership team. You will contribute to high-volume food production, supervise kitchen staff, and ensure flawless execution of menu items.

This role requires strong culinary training, leadership, and a commitment to food safety. Hours may include nights and weekends, with competitive hourly pay of $20–$23. You will mentor staff, manage inventory, and uphold presentation standards in a fast-paced event

Qualifications

• Experience as a Sous Chef or similar in a fast-paced kitchen.
• Culinary degree or formal training preferred.
• Knowledge of cooking techniques and presentation.
• Strong leadership and staff development abilities.
• Excellent organizational and time-management skills.
• Strong communication and food-safety knowledge.

Responsibilities

• Oversee kitchen staff and ensure tasks meet safety guidelines.
• Participate in food prep and cooking according to menu and standards.

• Ensure dishes leaving the kitchen meet quality and presentation expectations.
• Maintain stock and rotate items FIFO to minimize waste.
• Report shortages or equipment issues to the Exec Chef.

Location: We are seeking an experienced Sous Chef for our Convention Centre in St. John's, NFLD.

Job Overview

The Sous Chef is a key member of the kitchen leadership team, working directly under the Executive Chef. This role involves assisting with managing kitchen operations, supervising kitchen staff, ensuring the preparation and presentation of high-quality dishes, and maintaining a clean and organized kitchen environment. The Sous Chef plays an important role in food preparation, training staff, maintaining inventory, and upholding food safety and sanitation standards.

Essential Responsibilities

• Assist the Executive Chef in overseeing kitchen staff, ensuring that all tasks are completed efficiently and according to food safety guidelines.
• Participate in food preparation and cooking of dishes in accordance with the restaurant's menu and quality standards.
• Oversee the preparation of sauces, soups, entrees, sides, and garnishes, ensuring they are cooked and presented to the highest standards.
• Ensure that all dishes leaving the kitchen are of the highest quality and presentation, adhering to the restaurant's style and standards.
• Ensure that stock levels are maintained, and that items are rotated according to FIFO (First In, First Out) to avoid waste.
• Report any shortages, equipment malfunctions, or needed supplies to the Executive Chef or kitchen manager.
• Ensure that all kitchen staff follow food safety and sanitation guidelines at all times, including safe food handling and cleanliness of work areas.
• Ensure that all kitchen equipment is properly maintained and used according to safety standards.

Qualifications/Skills

• Proven experience as a Sous Chef or similar role in a fast-paced kitchen environment.
• Culinary degree or formal training from a recognized culinary school preferred.
• Extensive knowledge of cooking techniques, food preparation, and presentation.
• Strong leadership and management skills, with the ability to motivate and mentor kitchen staff.
• Strong organizational and time-management skills, able to manage multiple tasks in a high-pressure environment.
• Excellent communication skills, both with kitchen staff and front-of-house personnel.
• Knowledge of food safety regulations, sanitation standards, and kitchen equipment maintenance.
• Creativity and a passion for developing new dishes and menu items.
• Ability to maintain composure and quality standards during busy or stressful times.

Hours may be extended or irregular to include nights, weekends and holidays.
