POSITION SUMMARY:

This position supports the YMCA of the Rockies, Snow Mountain Ranch, which operates a mission-based family and group conference and retreat center, along with a residential camp serving over 50,000 guests annually. Under the supervision of the Executive Sous Chef, the Sous Chef, with assistance from another Sous Chef, manages full-time and seasonal staff, daily meal services, and banquet/catered orders. The primary responsibilities include overseeing shifts in The Schlessman Commons Dining Hall, maintaining recipes and SOPs, managing food ordering and storage within budget, and ensuring sanitation and safe food handling standards. The Sous Chef reports staffing, scheduling, receiving, and customer complaints to the Executive Sous Chef and is encouraged to handle such issues per established guidelines.

ESSENTIAL FUNCTIONS:
  • Oversee daily kitchen tasks and assist in prioritizing kitchen staff activities.
  • Manage all kitchen operations in the absence of the Executive Sous Chef.
  • Operate shifts professionally and efficiently, utilizing streamlined tools and procedures.
  • Participate in weekly meetings with the Executive Sous Chef on personnel, equipment, training, seasonal trends, and daily operations.
  • Work all shifts, including holidays and weekends.
  • Ensure compliance with OSHA, Department of Health, USFDA, and YMCA standards.
  • Train, develop, and supervise staff to foster high morale and productivity.
  • Create a learning and growth culture for seasonal staff.
  • Maintain strong communication with the Front of House Manager to ensure guest satisfaction.
  • Assist staff with scheduling and Commons-related knowledge, directing them to HR or other resources as needed.
  • Collaborate with the other Sous Chef to support team needs and accountability.
  • Maintain extensive knowledge of food service equipment.
  • Promote a positive, safe, and respectful work environment through attitude and communication.
  • Maintain high energy, stamina, and a proactive approach to shift management.
  • Generate ideas for operational improvements and future planning.
  • Monitor reports, upcoming events, and operational needs.
REQUIREMENTS/QUALIFICATIONS:
  • ServSafe Certification.
  • Valid USA driver’s license with acceptable driving record.
  • Culinary degree with at least two years of experience in high-volume, diverse dining settings.
  • Two years of management experience, preferably in large-scale, seasonal, multilingual environments.

WORK ENVIRONMENT & PHYSICAL DEMANDS:

Work in a kitchen environment, standing for long periods, in noisy conditions, and lifting objects up to 30 lbs. Must be able to stoop, kneel, and bend throughout shifts. Employees are responsible for all duties associated with this role.
