This posting is for an new vacancy within Lais Hotel Properties Limited.

Position Summary

To assist the restaurant team in achieving high standards of quality service, while developing the Food & Beverage team professionally in the area of service and wine.

Duties and Responsibilities
  • Provide personalized and exceptional guest service at every given opportunity
  • Meeting established up-selling and sales goals
  • To ensure key targets are met
  • To provide a high standard of service
  • To maximize all beverage sales through promotions and server participation
  • To keep overhead down without being detrimental to the business
  • To assist in the carrying out of training sessions relating to wine service, company wide when required
  • To carry out a monthly beverage inventory and assist in sales reports
  • To review wine list, and liquor inventory on an ongoing basis
  • Recommend products according to budget
  • To assist in the development of the team and to participate fully with ongoing training initiatives, company wide as required
  • To be fully aware of departmental standards and procedures ensuring standards are maintained at all times as agreed upon by the manager
  • To ensure that a high standard of guest service to both internal and external guests is met.
  • To ensure all objectives set by the manager are achieved wherever possible
  • To ensure all equipment in the department is correctly used, maintained and properly stored and is always kept clean
  • Possess extensive wine and beverage knowledge to be able to communicate confidently with all guests
  • To ensure all correct mis en place is carried out prior to service as agreed with the Food and Beverage Manager
  • To be accountable for end of shift closing down procedures, change requests and server tip outs
  • Exceptional food and wine knowledge
  • Product and regional area knowledge
  • Assisting in opening and closing duties
  • Create check, collect payment, and settle transactions following standard operating procedures
  • Responsible for cash floats and deposits
  • Leading in the service function and setting a positive example for new and existing team members
  • To liaise with the Supervisor/Manager on training needs for team members
  • To complete Skills Checklists for all new hires
  • Recommend wine menu changes to Food & Beverage Manager
  • Having a thorough knowledge of Vintage Hotels’ products and services
  • Suggesting additional product and services meeting our guests’ specific preferences
  • All other duties as assigned
Health and Safety Responsibilities
  • A worker shall,
  • work in compliance with the provisions of the Occupational Health & Safety Act and the regulations;
  • Use or wear the equipment, protective devices or clothing that the worker’s employer requires to be used or worn;
  • Report to his/her employer or supervisor the absences of or defect in any equipment or protective device of which the worker is aware and which many endanger himself, herself or another worker; and
  • Report to his/her employer or supervisor any contravention of the Occupational Health & Safety Act or the regulations or the existence of any hazard of which he/she knows
  • No worker shall,
  • remove or make ineffective any protective device required by the regulations or by his/her employer without providing an adequate temporary protective device and when the need for removing or making ineffective the protective device has ceased, the protective device shall be replaced immediately;
  • use or operate any equipment, machine, device or thing or work in a manner that may endanger himself/herself or any other worker; or
  • engage in any prank, contest, feat or strength, unnecessary running or rough and boisterous conduct
  • Comply with all Vintage Hotels health & safety policies
  • Do not operate any equipment/machinery without given proper instruction and authority to do so
  • Horseplay and running will not be tolerated at any time
  • All personal protective equipment will be properly worn
  • All personal protective equipment will be worn in the appropriate departments
  • Do not climb any of the racking systems
  • Do not ride on the automatic or manual conveyor systems
  • All long hair must be tied up in order to prevent entanglement in machinery
  • Do not put any foreign objects (body or innate) into the machines
  • Do not remove any machine guards
  • All safety signs must be adhered to
  • Smoking is not permitted on Company property
  • Always ensure that workplace accident/injuries are reported immediately to a Manager/Supervisor
  • Failure to comply will result in the application of the Human Resources Standard & Procedure “#C.15 Progressive Corrective Action”
Technical/Managerial/Administration Requirements
  • Demonstrated knowledge of food and wines
  • Knowledge of POS in Food & Beverage
Professional Requirements
  • Five (5) years experience, gained in premium Food & Beverage outlets/facilities
  • Solid technical knowledge of food and wine
  • Several wine courses and sommelier training
  • Previous up-selling and/or sales experience is considered an asset
