Dexterra Group is seeking a Garde Manger Cook for a remote camp in Canada. The role includes preparing cold kitchen items, assembling salad bars, and supporting buffet and catering services.

This safety-sensitive position requires pre-employment drug testing and FIT testing, with fly-in/fly-out travel from Edmonton or Yellowknife to Nunavut. Rotational schedule is 3 weeks on, 3 weeks off, with shared accommodations and meals on site.

Qualifications

• High school diploma or equivalent required; culinary education preferred.
• Minimum 2 years in garde manger, deli, or cold kitchen.
• Experience in high-volume camp/remote kitchens preferred.
• Certifications: Food Safe, WHMIS, and First Aid (or willingness to obtain).
• Pre-employment and pre-access drug and alcohol testing required.

Responsibilities

• Prepare and present cold menu items (salads, sandwiches, platters) per recipes and camp menus.
• Assemble and maintain salad bars, stations, and cold buffets; ensure attractive presentation and stock.
• Slice and portion meats, cheeses, fruits, and vegetables adhering to HACCP standards.
• Adjust recipes and portion sizes for fluctuating camp populations and dietary requests.
• Maintain proper temperatures and HACCP logs; ensure cold storage safety.
• Label, date, and rotate stock using FIFO; minimize waste.
• Maintain cleanliness and sanitation of cold kitchen areas and equipment.
• Assist with catering events, hors d’oeuvres, boxed lunches as directed.
