Job Description

The Kitchen Coordinator / HACCP Supervisor is responsible for ensuring the smooth daily operation of the kitchen through effective coordination and the implementation of food safety and hygiene standards in compliance with HACCP principles. This role serves as the key link between kitchen operations, procurement, and quality assurance to ensure safe, high-quality food production.

Key Responsibilities:

Kitchen Coordination:

  • Coordinate with chefs and kitchen staff to manage daily operations and food preparation schedules.

  • Monitor kitchen inventory levels and liaise with the purchasing department for ordering ingredients and supplies.

  • Ensure all kitchen equipment is maintained in good condition and coordinate maintenance when necessary.

  • Assist with kitchen documentation, such as recipe updates, production logs, and schedules.

HACCP:

  • Implement and monitor HACCP plans and procedures across all kitchen areas.

  • Conduct regular hygiene inspections of kitchen areas, storage, and equipment.

  • Ensure compliance with food safety regulations and company standards.

  • Train kitchen staff on hygiene standards, proper food handling, and critical control points.

  • Maintain records of temperature logs, cleaning schedules, and corrective actions.

  • Coordinate with the Hygiene Officer or Quality Control team during internal or external audits.


Qualifications

  • Degree/Diploma in Food Technology, Culinary Arts, or related field.

  • HACCP certification required.

  • At least 1–2years of experience in a similar role in a hotel, resort, or industrial kitchen.

  • Strong knowledge of food safety standards and kitchen operations.

  • Good communication, coordination, and reporting skills.

  • Detail-oriented and well-organized.
