Job Summary

Rambow Craft Brewery is looking for an enthusiastic, talented, and adventurous Executive Chef to join the leadership team.

As the Executive Chef, the ideal candidate will demonstrate competencies in three key areas: culinary skills, business acumen, and leadership/management. This role is a leadership position, and as such it will demand careful attention to detail, excellent execution, creativity, endurance, and great problem solving skills.

The successful candidate will have the opportunity to help design their kitchen, and make decisions about equipment, placement, etc. They will also get to shape menus and event services in coordination with the CEO.

Rambow Craft Brewery is an exciting start-up in Red Deer County, AB, and offers many unique opportunities to the right candidate. Please note that this position will not be starting immediately, and will be on-and-off in pace until our operation is fully open to the public.

About the Position

This position will have you joining the leadership team at Rambow Craft Brewery!

Rambow Craft Brewery is Central Alberta’s first German-style brewpub, set it Red Deer County. We aim to be Central Alberta’s destination for German-style food, German-style beer, and an atmosphere that celebrates German culture. The successful candidate will not be preparing chicken wings, cheeseburgers, or dry ribs- instead, there will be a committed focus to regional dishes like Schnitzel, Kartoffelklöße, Spätzle, and others.

Rambow Craft Brewery is a start-up business. The successful candidate will be joining a hardworking and committed core team, and will help shape the vision and mission of this new brewpub.

Responsibilities

The key responsibilities of the Executive Chef include, but are not limited to:

  • Designing the layout of the kitchen during the start-up process.
  • Coordinating with the CEO and respective contractors to ensure proper delivery, installation, and usage of kitchen equipment.
  • Designing menus and event service in coordination with the CEO.
  • Recruit and hire necessary kitchen and service staff while working within set budgets.
  • Arrange or delegate the arrangement of food and equipment deliveries while working within set budgets.
  • Train and encourage/inspire the growth of your culinary/service team.
  • Prepare budget reports and manage the BOH budget (restaurant side only). Deliver reporting on budgets, income, costs, etc.
  • Keep up-to-date licenses and permits necessary to fulfill your job requirements, in accordance with Alberta Health Services and other governance boards and agencies.
  • Ensure that your culinary team has all necessary licenses and permits in accordance with Alberta Health Services and other related governance boards.
  • Operate in accordance to all Albertan and Canadian public health and safety regulations.
  • Foster a positive, safe, and inclusive work environment.
  • Manage inventory related to kitchen and service areas (separate from brewery alcohol/merchandise inventory, which will be managed separately under a different role).
  • Coordinate with the Brewmaster and the CEO to achieve smooth, safe, and prosperous operations.
  • General prep and service responsibilities during service shift.
  • Other responsibilities as needed.

Requirements

  • High School Diploma.
  • Post-secondary diploma, degree, or commensurate experience (must be demonstrable).
  • Must own, use, and maintain your own set of knives.
  • Must own and operate your own personal vehicle.
  • Must demonstrate advanced or implicit knowledge of different regional German and ethnically-German cuisine.
  • German language an asset, but not a requirement.
  • In the event of equity ownership as part of (or in lieu of) compensation, a standard criminal background check will be required.
  • Preference will be shown to candidates with leadership and/or business experience.
  • Experience in opening a restaurant or food service operation a strong asset.

Compensation

  • $65,000 - $85,000 gross annual salary.
  • 2 weeks (14 days) paid vacation.
  • As part of - or in lieu of - full compensation, equity ownership in Rambow Craft Brewery can be negotiated.

As a start up, we may need time to ramp up to your agreed-upon salary. We are working on a benefits program but do not currently have one.
