Job summary

Fairmont Hotel Macdonald in Edmonton is seeking an seasoned culinary professional for a full-time role. Reporting to the Executive Chef, you will lead kitchen activities, ensure premier service, and manage production to meet high standards for both à la carte and buffets.

The ideal candidate has a minimum of 6 years cooking experience, a Red Seal Certificate or equivalent, and prior supervisory experience. You will work in a luxury hotel setting and contribute to safety, quality, and guest

Qualifications

  • Minimum 6 years cooking experience.
  • Experience in a luxury hotel with comparable service and standards is an asset.
  • Proficiency in both a la carte and production cooking.

Responsibilities

  • Consistently offer professional, friendly, and proactive guest service while supporting fellow colleagues.
  • Prepare and supervise the production of necessary food items in accordance with standards to ensure uninterrupted guest service.
  • Ensure consistency in preparation of all items for a la carte and buffet menus.
  • Actively share ideas, opinions, and suggestions in daily shift briefings.
  • Have full knowledge of all menu items, daily features, and promotions.
  • Ensure station opening and closing procedures are carried out to standards.
  • Operate all kitchen equipment safely at all times.
  • Handle, store, prepare, and serve food safely per guidelines.
  • Manage day-to-day operations of their station.
  • Maintain a clean and safe working environment and participate in safety initiatives.
  • Carry out other tasks as assigned.

Job Description

What you will be doing:

Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:

  • Consistently offer professional, friendly, and proactive guest service while supporting fellow Colleagues
  • Prepare and when required delegates the production of the necessary food items in accordance with standards in a timely and efficient fashion to ensure that there is no interruption to guest service
  • Ensure consistency in the preparation of all food items for a la carte and or buffet menus according to hotel recipes and standards
  • Actively share ideas, opinions, and suggestions in daily shift briefings
  • Have full knowledge of all menu items, daily features, and promotions
  • Ensure that station opening and closing procedures are carried out to standards
  • Operate all kitchen equipment and conduct themselves with safety in mind at all times
  • Ensure that all food products are handled, stored, prepared, and served safely in accordance with hotel and government Food Safety guidelines.
  • Responsible for the day to day operations of their station
  • Ensure a clean and safe working environment, and actively participate in health and safety initiatives
  • Carry out any other tasks as assigned

Physical Aspects of Position (include but are not limited to):

  • Constant standing and walking throughout shift
  • Frequent lifting and carrying up to 30 lbs
  • Occasional kneeling, pushing, pulling, lifting
  • Occasional ascending or descending ladders, stairs, and ramps
Qualifications

Your experience and skills include:

  • Minimum 6 years cooking experience
  • Experience in a luxury hotel with comparable service and standards is an asset
  • Red Seal Certificate (Journeyman’s papers) or Recognized International Equivalent
  • Must have experience and be proficient in both a la carte and production cooking
  • Previous supervisory experience
  • Self-motivated, with the ability to make effective decisions
  • Demonstrates initiative, and the ability to work with minimal supervision
  • Ability to maintain high service levels under pressure
  • Ability to consistently stand and walk throughout shift

Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining work authorization documents

Hourly Rate Range: $31.15 - 32.15 CAD Gross per hour
