Job summary

Sooke Harbour House on Vancouver Island seeks a Chef de Partie (CDP) to execute hot line service, lead station operations, and uphold culinary excellence with a focus on local ingredients and seasonal menus.

You will work in a fast-paced kitchen, maintain high standards, and collaborate closely with leadership to ensure consistent, high-quality dishes during service.

Qualifications

  • 2+ years of professional kitchen experience required.
  • Experience in a fast-paced kitchen environment preferred.
  • Formal culinary education or apprenticeship preferred.
  • Red Seal certification is an asset.
  • Ability to work under pressure and maintain standards.

Responsibilities

  • Prepare and cook high-quality dishes for service
  • Butcher and portion fish, meat, and seafood to specification
  • Prepare sauces, reductions, and accompaniments
  • Support daily features and seasonal menu execution
  • Maintain clean, organized, and efficient workstations
  • Assist with receiving and storing kitchen deliveries
  • Support kitchen leadership and team communication during service
  • Help lead line shutdown and deep cleaning procedures after service
  • Uphold food safety, sanitation, and quality standards at all times

About the Role

This position focuses on the execution of hot food service, protein preparation, sauces, daily features, and station leadership within our kitchen operations. You will play a key role in maintaining culinary excellence, consistency, and strong execution during service.

Key Responsibilities
  • Prepare and cook high-quality dishes for service
