Qualifications

• Minimum of 10 years of experience as an Executive Chef.
• Strong leadership and management skills.
• Excellent communication and organizational abilities.
• Knowledge of current industry trends and techniques.
• Ability to work in a fast-paced and high-pressure environment.
• Strong understanding of food and labor costs and the ability to manage them effectively.

Responsibilities

• Pre-Opening & Facility Setup: design layouts, establish workflows, and define equipment/smallware requirements.
• Lead supplier trials, ingredient approvals, kitchen testing, food safety licensing, and mock runs before launch.
• Culinary Leadership & Product Development: oversee culinary standards across bakery, pastry, and hot-kitchen divisions.
• Production Planning & Daily Operations: convert store forecasts into efficient daily, weekly, and monthly production schedules.
• Food Safety, QA & Compliance: HACCP-based controls, SOPs, and regulatory alignment.
• Cost Control, Yield & Profitability: manage recipe costing, yields, waste reduction, and cost variances.
• Procurement & Inventory Management: set specs, par levels, and supplier evaluation; manage cold-chain and logistics.
• Systems, Documentation & Process Improvement: maintain central-kitchen manual and tracking systems; drive process improvements.
• Commercial Growth & Business Expansion: evaluate feasibility for B2B, HORECA, and cloud kitchens; support new revenue channels.
• Stakeholder & Cross-Functional Management: collaborate with Costa/Pickl, Finance, HR, Marketing, Procurement, and Maintenance; provide clear performance updates to GM.
