Tom's Place Malaysian Chinese Cuisine in Mildura, Victoria, is seeking an experienced full-time Cook to join the kitchen team. You will prepare authentic Chinese and Malaysian dishes, utilising traditional techniques such as wok cooking and steaming to a high standard.

You will work closely with the kitchen team to ensure timely preparation, presentation and adherence to recipes, quality standards, and food safety procedures during busy service periods.

Formación

• AQF Certificate III in Commercial Cookery, Certificate IV in Commercial Cookery or equivalent qualification.
• Sound knowledge and practical experience in authentic Chinese and Malaysian cuisine.
• Strong understanding of traditional Chinese and Malaysian ingredients, flavours, sauces, spices and cooking techniques.
• Experience in wok cooking, stir-frying, steaming, braising and other common methods.
• Previous experience as a Cook in a commercial restaurant or hospitality environment.
• Ability to maintain consistent food quality, portion sizes and presentation.
• Solid understanding of food safety, hygiene and WHS requirements.
• Good time management and organisational skills, especially during busy service.
• Ability to work independently and as part of a kitchen team.
• Flexibility to work across weekdays, weekends and public holidays.

Responsabilidades

• Prepare and cook a variety of Chinese and Malaysian dishes according to recipes and menu requirements.
• Prepare ingredients, sauces, marinades, stocks and other components for daily cooking.
• Apply traditional Chinese and Malaysian techniques including wok cooking, stir-frying, steaming, braising and deep-frying.
• Ensure correct use of herbs, spices, seasonings and sauces typical of Chinese and Malaysian cuisine.
• Monitor cooking times, temperatures, portion sizes and presentation for consistent quality.
• Set up and manage cooking stations before and during service.
• Monitor inventory, rotate stock and manage ingredients.
• Minimise food wastage through proper preparation and portion control.
• Maintain a clean, hygienic kitchen and comply with safety procedures.
• Collaborate with kitchen and front-of-house staff for timely meal delivery.
