Job summary

Endeavour Group is seeking an Executive Chef for Victoria to lead the food strategy across 80+ venues and drive culinary excellence for the Victorian portfolio. You will provide development and support to venue Head Chefs, ensure HACCP compliance, and align menu innovation with market opportunities while driving sales growth.

You will collaborate with the Operations team on opportunities, manage seasonal menus, and mentor apprentices and trainees, ensuring high standards of quality and safety

Qualifications

• Trade cooking qualifications and significant experience as a chef.
• Previous multi site experience including in a range of business settings (pubs, restaurants, functions etc)
• Certification in commercial food safety and HACCP principles.
• Cert IV Workplace training and assessment (or equivalent trainer accreditation)
• Knowledge of a wide range of cooking practices, food trends and presentation methods
• Knowledge of safe, hygienic working practices and ability to instruct others in their requirements
• Intermediate computer skills
• Strong business acumen and demonstrated ability to achieve business development targets
• Technical food development experience
• Leadership and team management skills
• Current driver licence and ability to travel across Victoria as required

Responsibilities

• Define venues' food offer and strategy across Victoria.
• Ensure business metrics including financial, safety, customer and team targets are met.
• Collaborate with Operations Team on opportunities and menu changes.
• Develop business cases for kitchen equipment changes.
• Support succession planning for future leaders.
• Oversee Apprentices and School Based Trainee programs.
• Audit and improve Food Safety processes at venue level.
• Ensure hygiene standards in back-of-house operations and allergen mapping.
• Contribute to seasonal menu updates and market-driven pricing.
• Develop peak trading day menus and a state calendar of food activities.
• Provide training and development to venue Head Chefs.
