Job summary

Employer Sponsored Jobs in Sydney is seeking a Tandoori and Curry Chef to take ownership of the Indian kitchen in a high-volume setting.

You will lead the Tandoor section, craft naan, roti and kebabs, and prepare a wide range of curries while mentoring junior staff and helping to develop new menu dishes. Sponsorship is available for the right candidate, and the role is full-time and stable.

Qualifications

• Minimum 5 years of experience in a relevant role, with proven tandoor and curry expertise.
• Strong knowledge of Indian spices, marinades and traditional and contemporary techniques.
• Excellent knife skills, prep, mise en place and high-volume service experience.
• Solid understanding of food safety and kitchen hygiene standards.
• Reliable, professional attitude with strong teamwork and communication.

Responsibilities

• Manage the Tandoor section and oversee its daily running
• Produce naan, roti, kebabs, tikka and other tandoori dishes to restaurant standards
• Cook a wide range of Indian curries, authentic and contemporary
• Complete marinades, gravies, sauces, stocks and mise en place
• Protect consistency, portion control and plate presentation
• Perform efficiently during peak service times
• Apply food safety and kitchen hygiene standards at all times
• Reduce wastage and support stock management
• Support menu development and train junior kitchen staff

A well-established hospitality group in the heart of Sydney wants to appoint a Tandoori and Curry Chef who can take real ownership of its Indian kitchen. The business serves at high volume, and it needs someone whose tandoor cooking and curry preparation are already proven in a professional setting.

The chef it chooses will also help develop the menu and new dishes, and will guide less experienced cooks on the line. Sponsorship is available for the right candidate, and the role is full-time and stable.
