Job summary

ALH Hotels in Adelaide seeks a State Executive Sous Chef to drive culinary excellence and commercial performance across South Australia venues. You will lead Head Chefs, develop menus, and manage supplier relations while upholding food safety standards.

The role requires multi-site kitchen leadership, a trade qualification, a current Driver's Licence and HACCP certifications. Travel within the state is expected with a company vehicle provided.

Qualifications

• Trade qualified chef with a current Driver's Licence and HACCP/commercial food safety certifications.
• Proven multi-site experience managing high-volume kitchen operations across pubs.
• Strong business acumen with GP, labour metrics and commercial target management.
• Inspiring people leader with coaching Head Chefs and developing teams.
• Skilled menu developer with trend knowledge and costing.

Responsibilities

• Drive menu innovation with Executive Chefs to create seasonal, market-leading menus.
• Optimise commercial performance: gross profit, sales, labour, productivity.
• Champion food safety: HACCP audits, standards, continuous improvement.
• Lead recruitment, onboarding and apprentice training programmes.
• Manage supplier relationships for consistency, allergen mapping and costs.
• Lead hands-on launches, venue cook-offs, recipe validation, kitchen reviews.
• Maintain kitchen safety and wellbeing, oversee return-to-work and incidents.
• Assess equipment and build business cases for upgrades.
