Job summary

RACV Cape Schanck Resort on Victoria's Mornington Peninsula is seeking a Sous Chef to lead the Mantellina and Samphire Dinner kitchen. You will partner with the Chef de Cuisine to deliver high‑quality menus and memorable guest experiences.

In this hands‑on role you will coach the kitchen brigade, manage stock, costs and food safety standards, and help develop menus. Flexibility across a 7‑day roster and evenings is required to support resort events.

Qualifications

• Strong leadership capability to guide the kitchen brigade.
• Solid knowledge of food safety, hygiene and workplace safety.
• Excellent communication, organisation and time management skills.
