Responsibilities

• Run the kitchen in the Head Chef's absence and lead the team.

• Maintain cost controls and relationships with regulatory bodies.

The Elgin Inn has recently transformed from the classic traditional corner pub, to a hugely expanded space with a brand new All-weather Atrium and balcony with retractable roof, Sports Bar and dining area, Roof Top Deck and Bar, Multi-faceted function space, a soon to be finished Family and Kid’s zone, and an Outdoor dining area. The Elgin Inn in Hawthorn is seeking an enthusiastic and passionate trade qualified Sous Chef to complete our team.We pride ourselves on quality food, beverage, and customer service and are looking for an outstanding chef who has extensive experience in a variety of food operations. The venue is conveniently located next to train and tram stops, providing easy access via public transport.

The Position:

We are seeking a passionate professional that is energetic, organised andself-motivated, with strong leadership qualities. In this roleit will be your responsibility to assist the Head Chef with the daily operation of the kitchen, and really run the show in their absence, ensuring quality and consistency are maintained across the board.

The role:

• Running the kitchen in the absence of the Head Chef
• Assist in leading the team, ensuring food preparation, cooking, and presentation is consistently high.
• Assist in staff supervision and coordinating activities pertaining to food preparation.
• Plan, develop and cost menus. Ordering, receiving, and checking of deliveries and other stock.
• Lead and teach other kitchen employees in the preparation, cooking and presentation of food.
• Strong leadership, administration and Management control
• Ensuring food preparation, cooking and presentation is of a high standard at all times.
• Menu development and planning.
• Demonstrate, implement and maintain effective cost control strategies for both product and labour.
• Develop and maintain appropriate relationships with relevant regulatory authorities.
• Ensure HACCP and OHS compliance and maintain correct food safety procedures.
• Play your part in providing great meals and a memorable visit for our customers.

The Person:

You must be passionate about food and able to lead by example, with drive, enthusiasm and attention to detail.

You will possess excellent communication and interpersonal skills, be able to motivate and develop staff,and be adept at maintaining a positive team environment.

You must have the ability to work under pressure.
