Job summary

ALPHA GLOBAL CATERING PTY LIMITED is seeking an experienced Sous Chef to join our Werri Beach kitchen in Gerringong NSW. You will support the Head Chef with daily operations, menu planning, food quality, presentation, hygiene and service standards.

Responsibilities include menu development, forecasting food and labour, ordering supplies, preparing and cooking, supervising staff, training juniors, controlling costs and ensuring dishes are prepared efficiently and served on time.

Qualifications

• Certificate IV in Kitchen Management or Commercial Cookery; or a Diploma of Hospitality Management.
• Minimum 1 year of proven experience in a fast-paced kitchen.
• Strong cooking, leadership and organisational skills.
• Excellent communication and time management skills.

Responsibilities

• Assist with planning and developing menus based on customer demand and business requirements.
• Assist with estimating food requirements, food costs and labour requirements.
• Order and monitor food supplies to maintain stock levels.
• Prepare and cook dishes according to menu and standards.
• Monitor quality of dishes from preparation to presentation.
• Discuss food preparation and service matters with Head Chef and staff.
• Supervise chefs, cooks and junior kitchen staff during preparation and service.
• Allocate kitchen duties and coordinate workflow during busy periods.
• Train and support junior kitchen staff; monitor ingredient quality and storage.
• Assist with controlling food costs and minimise wastage; ensure timely service.
• Maintain high standards of kitchen cleanliness and organisation.

The successful applicant will support the Head Chef in managing daily kitchen operations, planning menus, supervising food preparation and maintaining consistently high standards of food quality, presentation, hygiene and service. Assist with planning and developing menus based on customer demand and business requirements. Assist with estimating food requirements, food costs and labour requirements. Order and monitor food supplies to maintain appropriate stock levels.

Prepare and cook dishes according to menu and business standards. Monitor the quality of dishes throughout preparation, cooking and presentation. Maintain consistent portioning, plating and presentation standards.

Discuss food preparation and service matters with the Head Chef, management, kitchen staff and front-of-house team. Demonstrate cooking techniques and advise kitchen staff on preparation and cooking procedures. Supervise chefs, cooks and junior kitchen staff during preparation and service.

Allocate kitchen duties and assist with coordinating workflow during busy service periods. Train, guide and support junior kitchen staff where required. Monitor ingredient quality, freshness, storage and stock rotation.

Assist with controlling food costs and minimising food wastage. Ensure dishes are prepared efficiently and served on time. Explain, follow and enforce food hygiene and food safety requirements.

Maintain high standards of kitchen cleanliness and organisation. Support the Head Chef in improving kitchen procedures and overall operational efficiency.

Qualification & experience Certificate IV in Kitchen Management or Commercial Cookery, or Diploma of Hospitality Management or a related discipline , is required.

Minimum 1 year of proven experience in a fast-paced and quality-driven kitchen environment. Strong cooking, leadership and organisational skills. Ability to work effectively under pressure.
