Ten Minutes by Tractor on the Mornington Peninsula offers two-hatted dining with internationally acclaimed wines. We’re seeking experienced floor professionals to join us as Sommeliers, Assistant Sommeliers or Section Waiters, with permanent full-time or casual roles.

Qualifications

• Two-hat or Michelin-level fine dining experience.
• Strong knowledge of wine and food pairings.
• RSA required; WSET Level 2 or higher strongly regarded.

Ten Minutes by Tractor is a highly regarded winery and award-winning restaurant in the hinterland of the Mornington Peninsula. Our internationally acclaimed wines and commitment to excellence have made us one of Australia’s leading dining destinations.

About the Role

Service at our two-hatted restaurant is something we take great pride in, and as we head into summer we’re welcoming experienced floor professionals to join us. We’re open to Sommeliers, Assistant Sommeliers and Section Waiters, and will find the right fit for your experience.

Our focus this season is continuing to refine the whole guest experience. We’re looking for people who bring depth to the floor: reading a table, anticipating needs, and telling the story of our food, our wine and our region with confidence.

We are recruiting for permanent full-time as well as casual positions.

About You

You are a career-driven hospitality professional with a calm, confident presence and genuine warmth. You hold yourself to the highest standards without needing to be told, and you stay composed and solutions-focused under pressure.

What You’ll Do

• Deliver exceptional, polished service with warmth and professionalism
• Communicate detailed knowledge of the menu, wine list and winery story with confidence
• Section Waiters: run your section to two-hat standards
• Sommeliers and Assistant Sommeliers: deliver a high level of wine service, guiding guests through our extensive wine list with polish and care
• Maintain consistency across food, beverage and guest interaction
• Take part in daily briefings, fortnightly tastings and ongoing training
• Support seamless team operations and represent the Ten Minutes by Tractor brand with passion and integrity

What We’re Looking For

• Proven fine-dining experience at a two-hat, Michelin or comparable venue, with strong food and beverage knowledge
• Sommelier or Assistant Head Sommelier experience, or a strong passion for wine and a clear path towards it
• Experience with, or a genuine appetite to work with, an extensive international wine list
• A confident, natural communicator with a calm, professional demeanour
• Availability across a rotating Wednesday–Sunday roster, with Friday–Sunday essential, and across summer (December–February)
• RSA required; WSET Level 2 or above highly regardedd
• Reliable transport is essential, as the venue is not accessible by public transport
• Full Australian work rights are required. Visa sponsorship will not be considered, and we cannot assist with relocation.
