• Excellent knife skills and maintenance of personal equipment.
• Attention to detail.

• Sound problem solving capabilities, including reporting malfunctions or safety issues.
• Ability to manage priorities to meet production schedules.
• Ability to work in cold storage and with raw meat products.
• Sound understanding of Australian meat industry.

Responsibilities

• Operate switching controls to direct carcasses and meat cuts to boning tables.
• Cut meat to separate meat, fat and tissue from bones.
• Wash, scrape, and trim foreign material and blood from meat.
• Cut sides and quarters into standard cuts (rump, flank, shoulder) and prepare for packing.
